Cinnamon Chip Scones
We love to pick up Cinnamon Chip Scones at our local coffee shop but since it is a snow day and school is canceled, we are staying in, and needed a special treat. When these were finished, my hubby prayed and thanked God for a tiny bit of heaven here on earth! Good thing we doubled this recipe! No more picking these up because they are so easy and quick to make. The flavor and texture by far outrank any we have ever had. These are amazing! Now it is time to deliver some to the neighbors as a thank you for plowing our driveway this morning!
Oven Temperature: 425 degrees Yield: 1 Dozen
3 1/4 cups Flour
1/3 cup Sugar
2 1/2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
3/4 cup Cold Butter
1 cup Buttermilk (or 1 Tablespoon and milk to make 1 cup total. Let sit 10 minutes before adding to recipe.)
2 1/2 cups mini Cinnamon flavored Baking Chips
3 tablespoons melted Butter
Coarse Sugar or Sanding Sugar to sprinkle
Optional: 1/2 cup Powdered Sugar and 1 tablespoon Milk mixed together with a tiny smidge of Almond Extract
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Cut in butter until it resembles coarse crumbs. Stir in buttermilk just until moistened. Gently, fold in Cinnamon Chips.
- Place your dough on a lightly floured surface and knead until dough is no longer sticky, about 8-10 times. Divide into 2 equal pieces. Gently form each piece into 7 inch flat circles.
- Cut each circle into 6 equal triangles. Place on an ungreased cookie sheet. Brush each piece with melted butter and sprinkle with sanding sugar. Bake at 425 degrees for 13 minutes or until lightly browned.
- In a small bowl, mix Powdered Sugar and Milk together. Drizzle over the Cinnamon Scones. Serve warm. Enjoy!
